"The Bitter Truth"

All my life I've been a huge fan of eating sweet! I remember me being a child and eating up all of the chocolate I was given at almost the same instant moment. Not that I was given sweets that often. I grew up in the times when our country was ruled by communism and we all were poor and limited in our choice. There were bananas & oranges once a year, around Christmas (or rather New year, as we were forbidden to celebrate Christmas or relate to it), and our parents were able to buy a limited amount of those foods. Raw Prebiotics Dip


The other day I saw an old man selling at the market Jerusalem Artichoke, his own produce. Decided to buy half a kilo of this delicious vegetable and cook something healthy and new.
For those of you who are not familiar with Jerusalem Artichoke (aka Topinambur), here is some more information on it.
I would like to only add that Topinambur is a great source of Inulin and the second best known source of prebiotics in the World.
