Kidney Beans Stuffed Sun-dried Peppers

A few years ago I tried for a first time the typical Bulgarian dish, sun-dried red peppers stuffed with beans, in a cozy and nice restaurant, called Vishnite. Ever since I've dreamt of making the dish on my own. More to that, I've not eaten this again since. How come? I can't answer this question otherwise but be honest - I simply don't know :)
But the right time has come and for this Christmas
Eve I've done it. It's kind of easy to make and is also simple, but it requires to start the preparation one day earlier. It's worthy, as in my opinion, this is one of the most delicious traditional Bulgarian dishes!

Ingredients:
1. Sun-dried red peppers: 5-6
2. White kidney beans: 1 cup
3. Onion: 2, preferably red
4. Garlic: 5-6 cloves
5. Carrots: 2, medium
6. Savory (dried): 2 tablespoon
7. Salt: 1 tablespoon
8. Chilli paprika: 1 tablespoon
9. Peppermint (dried): 2 tablespoon
10. Wholegrain flour: 50 gr
11. Sauerkraut: 3-4 leaves & 100 ml juice (optional) 
12. Olive oil

Preparation:
Step 1: (24 hours before cooking) Put the white kidney beans to soak in water for 24 hours;
Step 2: Put the sun-dried red peppers to soak in hot water for at least 30 min;

Step 3: De-skin the soaked white kidney beans and rinse well;
Step 4: Boil the deskined beans and when ready add the salt (to taste), mint, chilli paprika & savory, and put aside;
Step 5: Cut the onions, garlic & carrots into pieces;

Step 6: Stew the onions, garlic & carrots in olive oil and add the mixture to the boiled and seasoned beans;

Step 7: Take the peppers out of the water and carefully clean them inside from all leftovers (put special attention to deseeding);
Step 8: Stuff the peppers with the mixture;

Step 9: Put the top of each stuffed pepper in the flour, to seal it;

Step 10: Put the stuffed peppers in a baking tin covered with cooking paper;
Step 11: (optional, for best results) Cover the peppers with the sauerkraut leaves, and add the juice on top;

Step 12: Cook for 10 min in high temperature, and then 10 in medium;
