Pumpkin Cream Soup For The Soul

It's started snowing here and I felt like making something special to indulge my soul in the cold weather. The other night I was invited to a family dinner and the pumpkin soup the host prepared was just heaven! And that's a lot, coming from me, as I'm not a huge pumpkin fan! Decided to give it a try, and maybe do some small amendments (not that it required improvements, more like to add my own signature ;)

So what we need is:

Raw pumpkin: 500 gr;
Carrots: 2 medium;
Potatoes: 2 medium;
Leek: 1;
Garlic: 7-8 cloves;
Ginger: to taste;
Olive oil: 2-3 tablespoons;
Paprika: 2 tablespoon (I put one regular & one chilli);
Thyme to taste;
Organic vegetable stock: 1 cube
Salt & pepper to taste;

Step 1: Chop the carrots, garlic, leek, thyme, red pepper powder & vegetable stock.
Step 2: Stew them in the olive oil for 10 min.
Step 3: Add the chopped potatoes & pumpkin and cover with water.

Step 4: Boil on medium heat until soft.

Step 5: When ready, add the salt & pepper and blend it all together.

Before serving, add some freshly grated ginger and serve hot!
