Raw Xmas Sweets

What could be better for enhancing the holiday spirit than delicious healthy sweets?!
My desire was to prepare something sweet, healthy, easy and quick. All requirements were answered by the following recipe:


Ingredients:
1. Raw pistachios (shell removed) & cashews: 1 1/2 cup, after removing the shell from the pistachios, the ratio must be 3:1


2. Coconut oil: 1/3 cup, melted
3. Honey: 1/3 cup
4. Cinnamon: 3 tablespoons







Choose aroma & good quality honey. I chose organic acacia honey and the smell and taste it gives to the sweets are just amazing!

Preparation:
Step 1: Grind the pistachios (after removing the shell) & cashew together


















Step 2: Blend all the ingredients together
Step 3: Use Xmas cookie cutters to shape your cookies














Step 4: (optional) If you don't have cutters, you could simply roll the mixture into foil and later (after refrigerating) cut it into small cookies with a sharp knife;
Step 5: (quick version) Put the sweets in the freezer for at least 30 min, after which they are ready to be served
Step 6: (slow version) Put the sweets (the rolls) in the fridge for at least 6 hours, after which they are ready to be served

Don't get worried if the rolls turn into strange shapes: that'll allow you to have cookies in different shapes later. You could even help the process by shaping the rolls with your fingers.

You could also put some coconut flakes onto the sweets, to achieve some extra festive spirit ;)

Yes, you can use agave syrop for a honey substitute. Same quantity.
