Special Raw Chocolate Cake

It's been so cold lately (mostly between -12 and -23C) that I had no desire to write or do anything! I started thinking that if there was a previous life for me it was the one of a bear: mainly 'cos of them sleeping throughout the cold winters.
For me one of the best weapon to fight the cold weather is eating sweets. Chocolate. There is such a special magic when I take a bit of a chocolate cake and it just melts in my mouth, making my whole being happier!

The recipe I'm about to share with you is a result of a long search on the net and combination of various recipes with my gut feelings ;) It is simple (has only 5 ingredients) and easy to prepare. On the negative side I must mention that this cake is a bit expensive and should be used for special occasions. And here it comes:

Ingredients for the crust:
Almonds: 200 gr, raw;
Cocoa oil: 1 tablespoon, melted;
Dry figs: 200 gr;

Ingredients for the filling:
Cashew: 250 gr, raw, soaked in water for 2 hrs;
Cocoa oil: 200 gr, melted;
Cocoa powder: 3 tablespoons;
Honey: 3 tablespoons;
Spring water: 1/3 cup;

Preparation of the crust:
Step 1: Grind the almonds (not too fine).

Step 2: Cut the dry figs into small pieces.
Step 3: Melt the cocoa oil.
Step 4: Mix everything together.

Step 5: Put the mixture on the bottom of a cake form.

Step 6: Refrigerate for at least 30 min before adding the cake mixture.

Preparation of the filling:
Step 1: Blend the soaked cashews, after carefully washing them.

Step 2: Add the water and the honey to the mixture.
Step 3: Add the melted cocoa oil with the cocoa powder.

Step 4: Blend all together well.

Step 5: Put over the base;

Step 6: Refrigerate for at least 2 hours before serving.

Enjoy :)
