Red Spring Soup

It's been awhile since I last posted a new recipe here. And the reason is not that I haven't cooked any tasty food but just my laziness... The Spring has arrived and it's all blooming and beautiful! And I'm trying to spend as much time outdoors as possible. Hence why there is no enough time for posting and for time-consuming recipes.

If you also (like me) have put on a few extra kilos during the Winter, now is the time right time to start eating foods that contain less calories and are easy to absorb.

All that said, here comes the recipe for a Spring celebrating Red Soup :)

2 stalks of leeks;
3 big carrots;
2 red peppers;
2 medium beetroots;
freshly grated ginger root (to taste);
1 tablespoon fresh mint (peppermint) leaves;
1 tablespoon extra-virgin, cold-pressed olive oil;

Step 1: Cut all ingredients into small cubes.
Step 2: Put all together and pour water to cover the vegetables.

Step 3: Bring to boil and then lower the feat to 3-4 (out of 9) and leave to simmer until ready (all is soft).
Step 4: Add the olive oil;
Step 5: Blend all together and add the chopped mint leaves:

Step 6: Serve hot or cold.
