Delicious Green Bean Salad

A few days ago I went to a market, where local organic food producers were selling their produce. Bought zucchini, green beans, cucumbers, and fresh corn. There happened to be a TV crew from a national TV station, and they shoot me while doing the deed :-p
The fresh corn I boiled the same day and ate with pleasure. The cucumbers were also easy to deal with but I had a difficult time deciding what to do with the green beans. Finally I asked for help my dear friends Kalina & Massimo, and here goes what I made from the recipe they were so kind to share with me:

Ingredients (3 servings):
1. Fresh green beans: 300 g;
2. Potato: 300 g;
3. Small red onion;
4. Carrots: 3 medium;
5. Extra virgin organic olive oil: 3 tablespoons;
6. Himalaya Salt: to taste;
7. Garlic: 3-4 cloves;

Step 1: Put the carrots and potatoes to boil:

Step 2: Clean the green beans and precook them in boiling salty water for 5-7 min:

Step 3: When ready, put the precooked green beans in cold water with some ice cubes inside, to preserve the green colour:

Step 4: When the potatoes & carrots are ready, cut them into pieces.
Step 5: Do the same with the green beans.
Step 5: Mix all together and season with the onion (cut in tiny rings), pressed garlic, salt, and extra virgin organic olive oil.

It also gives me the possibility to add own recipes and see the nutrition value of each. That's why I'm now able to offer you the approximate nutrition value in one serving of this amazing salad!
