Tomato Salad with Spicy Mousse

During the summer I usually eat raw food, with stress on salads. It's been 32-38 C here during the past month, so I live mainly on melons, watermelons and salads.
Yesterday I was cooking dinner for friends and started preparing a dish, which, during the process and my experiments turned out into something completely new and delicious. That's why I hurry to share the recipe with you, as it is easy to prepare, quick and tasty :)
Here is what you need to prepare my new gem :)

1. One big tomato;
2. Dry oregano - 1 teaspoon;
3. Red onion;
4. Cheese: 50 g;
5. Olive oil: 3 tablespoons;
6. Avocado: 1/4;
7. Garlic: 3-4 cloves;

Step 1: Mix the olive oil, oregano, avocado, garlic (pressed), cheese together and smash it all (manually or using blender) until smooth mixture:
Step 2: Cut the tomato into slices and put in a plate (I yielded 7 slices);

Step 3: Cut 7 tiny slices of the onion (number depends on the number of tomato slices) and put one on each tomato slice;

Step 4: Put a spoonful of the mousse on each slice;

You could also put some of the spicy mousse on a bread slice: tastes delicious!

Did you use a Bulgarian white cheese for the mousse? Looks delicious! :) I'm going out to buy some tomatoes- can't wait to try this salad!! :)

Yes, I used Bulgarian cheese: Fresko's Bio cheese.
