Frozen Herbs in Olive Oil

Living in Bulgaria and wanting fresh, organic herbs during the winter doesn't leave you with many options. During my stay in Athens I enjoyed fresh herbs throughout the year and tried to do the same in here, but last winter all the herbs I had at home died. Freezing the herbs also didn't go well (tried that one 3 years ago).
So you can imagine what my delight was when one day, while browsing through my home page on FB, I popped into an article suggesting we could freeze the herbs in olive oil. The idea being you'll be able to get a cube of frozen herbs with olive oil and instantly put it on salads or dishes. Unfortunately I forgot to add the source of
the information to my bookmarks, so I can't give credits to the guys, who first thought of it.

But here we go:

What do you need:
1. Herbs: the variety you use in the quantities you're going to need them (I had 4 different kind of basil, oregano, rosemary, mint, peppermint, thyme);

2. Empty ice-cubes plates;
3. Extra virgin olive oil;

Preparation:
Step One: Mix the herbs into the proportions you usually use and cut them in small pieces;

Step Two: Fill each cube of the ice-cube plate with herbs;
Step Three: Pour olive oil in each cube, until it covers the herbs in it;

Step Four: Put in the freezer;


Enjoy it during the winter!
